History of Classic French Pastries
The long complex and debated history of classic French pastries can be traced back to the 13th century when Regnaut-Barbon created waffle-like pastries known as “oulies”. It wasn’t until the 16th century that pastry chefs were recognized as professional bakers and popular baked goods like macaroons, sponge cakes, and marzipans expanded across kitchens.
